Japanese Ambassador Hosts Fish Tasting Session To Improve Freshness Of Fish In Mauritius

The Ambassador of Japan to Mauritius, Mr Shuichiro Kawaguchi, hosted a fish tasting session at his Residence in Floréal on Saturday 25 June 2022 with the objective to improving the freshness of fish and bring out the best of fishery products in Mauritius. The Permanent Secretary of the Ministry of Blue Economy, Marine Resources, Fisheries and Shipping, Mr Raj Kishore Bunjun, representatives of the Ministry, and other personalities were present at the event.

Ambassador Kawaguchi demonstrated techniques in cutting and cooking of fish with the purpose to give participants a chance to experience the difference in taste and appearance of distributed fish in Mauritius.

In a statement, Permanent Secretary Bunjun extended gratitude to the Japanese Ambassador for hosting the event which detailed on small techniques that can be adopted in the country. We should learn from the Japanese experts in terms of the sanitary aspects and conservation of the fish, he added.

A project team from the Japan International Cooperation Agency, OAFIC Co. Ltd and IC Net Ltd, actually present in Mauritius, gave a presentation on the methods that can be used by the fishing community with a view to improving their livelihood.

The presentation involved the different types of fishing including large net fishing, basket trap fishing and tuna fishing. The post-harvest handling of fish on-board, the post-harvest handling of fish at landing stations, the post-harvest handling of fish at shops were elaborated by the Japanese experts. The value-added activity by fishers in Japan such as the use of instant killing techniques, ‘Ikejime’, was also highlighted by the experts. This technique enables to keep raw fish for a longer period of seven days.
