The renovations lasted six months. They costed around 2.5 million euros. La Citronnelle, one of the iconic restaurants at Constance Belle Mare Plage has been welcoming its customers again since the 15th of July. This after having had a makeover. Gert Puchtler, who is the general manager of this 5-star hotel, explains that Constance Belle Mare Plage took advantage of the closure of the hotel during the pandemic. In particular to undertake major renovations in its main restaurant, La Citronnelle. “The restaurant now offers a unique lifestyle combining a friendly atmosphere, exceptional food, an excellent service and fine spirits,” he says. And added that the aim is to offer unique concept. “We not only offer one of the most complete and quality buffets on the island, but we also allow our guests to participate in the preparation of their dishes through open cooking spaces,” adds Gert Puchtler.

As for the new concept of the La Citronnelle restaurant, it includes exceptional infrastructures and decoration. Added to that is a hint of ingenuity and a few pinches of comfort. And all this sprinkled with a fusion of local and international flavors to the delight of its customers. The restaurant is now intended to be interactive with eight open cooking spaces, a dedicated bakery and pastry shop, a bistro area and a state-of-the-art hot and cold buffet. Something to make your mouth water! But also, it reflects the excellence of the avant-garde vision of Nicolas Baubé, the Executive Chef, who offers a timeless culinary world tour with deliciously crafted dishes.

Moreover, since his arrival at the hotel in October 2020, Nicolas Baubé has breathed new life into the seven restaurants for which he is responsible. He immediately reworked the menus and enhanced the new buffet while emphasizing on customer interaction. As a result, the kitchen, which is usually in the background, is now at center stage. The goal remains to offer an experience that appeals to all the senses. Transported by the scent of spices traditionally crushed on the “Ross Cari”, customers have the impression of being in the kitchen in the midst of chefs busy creating and who stop for a minute, to share with emotions and the secret of their gastronomic creations.
