On March 19, Teszy Ramboroho won the Pierre Hermé trophy in the Sweet Tapas category. Pastry chef at the Prince Maurice hotel, the young man dreams of taking part in the World Pastry Cup.
At 22, Teszy couldn’t have asked for more! And for good reason, on March 19, this resident of Médine Camps de Masque won the Pierre Hermé trophy in the Sweet Tapas category. “The competition took place on March 13 and 14. We were four finalists in the category. For the occasion, we had to present 3 desserts accompanied by a Nespresso. For my part, I proposed a pear mousse with candied lemon marmalade. My 2nd dessert was a caribbean morello cherry petal. For the 3rd I opted for a hazelnut coffee quenelle.”
Composed of pastry chef Pierre Hermé and culinary blogger Mercotte, the jury was full of praise for the young pastry chef’s desserts: “In their speeches Pierre Hermé and Mercotte declared that they greatly appreciated the finesse and complexity of my proposals. . Their appreciation tipped the trophy in my favor.”
Now Teszy intends to improve further in the hope of being part of the Mauritian brigade at the next Pastry World Cup: “As far as possible, I hope to get advanced training in France in order to have more experiences and thus validate my place at the next World Cup. This is the goal I have set myself for now!”
